Easy and delicious with a quick mint dip!


Makes 2 portions

300g  flour
15g yeast
15g sugar
45ml extra virgin olive oil
5 tbsp warm water


1 onion,cut into big chunks
1 clove of garlic,finely chopped
a handful of sun-dried tomatoes,roughly chopped
a handful of pitted black olives,roughly chopped
handful of roughly chopped fresh mint leaves
juice of half a lemon
salt and pepper for seasoning
5-6 tbsp of extra virgin olive oil


Preheat oven to 200°C.

Dissolve sugar and yeast in the warm water.

In a large bowl mix together flour,yeast mixture and only 25mils of the olive oil. Combine till you get a soft and smooth dough. Cover with a damp muslin cloth to prove till you make the toppings.

In a shallow pan, saute garlic, tomatoes, and onion till they soften and lightly season with salt and pepper.

Knock the risen dough back down, divide into two equal portions and set aside to rise.

When proved, roll out to form 2 long round portion of about 5mm thickness. Place on greased baking tray and make indentations all over the dough surface using your fingertips. Brush on the remaining olive oil on both the breads and add-on the toppings.

Bake for 10-15 minutes till slightly golden brown.

Mix the olive oil, salt and lemon juice, and the chopped mint leaves and drizzle on the foccacia.

Try out more toppings like fresh herbs, bacon or feta!
