Simple marinade, quick pan-roasted chicken with caramalised veggies. 🙂
1kg chicken legs (cut into thighs and drumsticks)
4 potatoes(cut into large chunks-not peeled) or 7-8 baby potatoes-boiled till cooked but not mushy
7-8 small white onions (peeled)
a handful of finely roughly chopped coriander
5 tbsp dark soy sauce
3 tbsp ginger and garlic paste
2-3 chunks of garlic (crushed)
1 cup honey
3 green chilis (crushed)
juice of 1 lemon
a knob of butter
4 tbsp sugar
just a dash of tabasco
chili flakes, dried herbs, salt and pepper for seasoning
Score the chicken and marinate with soy sauce, sugar, lemon juice, ginger and garlic paste also add in the crushed chilis. Rest for atleast 2 hours.
In a pan, melt the butter and add in the crushed garlic and saute. After a minute add in the potatoes and toss till coated with butter. Cook covered for another couple of minutes before you add the onions. Once you have added the onions, toss and season with chili flakes, herbs, salt and pepper. Add some lemon juice and some tabasco. Keep tossing them occasionally or they burn. Once they are cooked and caramalised.
In the same pan, add a little more butter and place in the chicken pieces- meatier side down. Also add in all the juices from the marinade. Turn them over after 2 minutes and brush with honey. Season with chili flakes, salt, pepper. Flip again after 2 minutes and let it cook, flip again when other side is cooked and caramalised.
Once cooked on both sides, toss in the veggies and garnish with coriander. Pour the juices from the pan on the chicken and veggies when serving.
