Rich Moist Mocha Cake with Royal Icing

Easy cake I made for Aouba’s birthday 🙂


250g softened butter
2 cups castor sugar
4 eggs
3 cups all purpose flour
2 tsp baking powder
1/2 cup cream
1 tbsp instant coffee
1 tsp cinnamon powder
4 tbsp cocoa powder
1/2 cup pineapple syrup (from the can)

2 egg whites
325g icing sugar
2 tsp lemon juice
a few drops of vanilla essence


Preheat oven to 150°C. Grease an 8 inch cake tin.

Whisk eggs in a large bowl, add in sugar, butter, milk, coffee, cocoa powder and cinnamon. Fold in flour and baking powder. Transfer to greased tin and bake for an hour and 5 minutes.

Remove from tin and while hot, slowly pour the syrup on the sponge cake and let it cool. While its cooling, make the icing.

Whisk the egg whites till you get stiff peaks using an electric mixer. Add in the icing sugar while mixing till there are no lumps and it starts becoming thicker. Don’t let it become too thick. Mix in the lemon juice and vanilla essence.

Gently spoon the icing on the cake till it is completely covered.

Decorate using dark ganache or anything that is not too sweet.
