Easy, not-so-perfect-lookin’, yummy apple pie!
4 medium-sized apples cut into chunks
200g brown sugar
2 tbsp all-purpose flour
juice of 1 lemon
3 cups all-purpose flour
a pinch of salt
250g cold butter
5 tbsp cold water
1 tsp white vinegar
1)Preheat oven to 220°C.
2)In a large bowl, combine flour, and salt. With your finger tips, rub in the butter till the mixture resembles breadcrumbs. Transfer to a processor and add in a lightly whisked egg and vinegar and blend. Add water till you get the right dough-like consistency.Rest in the fridge till you prepare the filling.
3)While the crust is resting, in another large bowl stir together the apple chunks, sugar, lemon juice and flour.
4)Roughly divide the dough into two parts. Roll out the first part till it is roughly 2cm thick.Gently lift and lay on to the tart tin. Cut of excess bits and combine with the other half of the dough.
5)Pour the filling in the tart tin and roll out the other half of the dough. Cut into 5cm wide strips and gently lay across the top of the tart according to its size. Brush on some butter on the strips.
6)Bake till golden and bubbly for around 40minutes in the preheated oven. Let it cool and serve!
It’s not the best looking pie,but the filling caramalizes and forms this amazing golden syrup with a little kick of sweet lemon.
