Quick and easy vegetarian recipe.
The filling of the wrap can be served without the wrap as potato chips with a creamy dip and some hot onion salsa.
Makes 5 wraps
5 rotis (you can use tortillas or pita breads)
3 large potatoes, cut into big chunky fries
2 tbsp olive oil
1 tsp:red chili powder,chaat masala, garam masala, salt, lemon juice, ginger garlic paste and sugar
150g hung curd
2 tbsp cream
1 tsp crushed mustard seeds, black pepper and chopped coriander
1 tsp ginger garlic paste
a pinch of salt
and a dash of tabasco (optional)
2 onions, cut into thin strands
1 tbsp lemon juice
1 tsp red chili powder,chaat masala,salt and sugar
1)Mix all the ingredients for the marinade in a bowl. Add in the potato chunks and coat them properly with the masalas. Fry in a shallow pan just till the sides are crisp. Transfer to a baking tray and grill in a preheated oven at 220°C.
2)Whisk all ingredients for the curd dip and let it rest in the fridge till the rest is prepared.
3) Toss onion strands with its marinade till completely coated. Taste and adjust the seasoning.
4)Assemble the potatoes, salsa and dip on a roti and serve.
