Two-layered explosion of chocolate in the mouth!
200g plain flour
200g caster sugar
1tbsp baking powder
175g softened butter
1tsp vanilla essence
175 dark chocolate
300g icing sugar (sifted)
1 tbsp honey
2-3 drops of vanilla essence
1) Preheat oven to 180°C.
2)Whisk all ingredients for the base till smooth and thick. Divide into two equal portions. Transfer one portion into a greased cake tin. Bake for 35 minutes.
3) Once cooled remove from tin and repeat for second layer.
4)While the second layers baking, make the icing. Melt the dark chocolate and butter in a double boiler till really smooth. Add in the honey, essence and cream and whisk. Whisk the whole chocolate mixture into the icing sugar till thick and smooth. Make sure it does not have any lumps.
5)Apply a generous amount of icing on the first layer, then place the second cooled layer on it. Gently spread on rest of the icing on the whole cake. Decorate!
