A result of missing ingredients and somethings turning out the way they shouldn’t be…
500g boneless chicken (cut into bite-size chunks)
2 tbsp tamarind chutney (http://www.indianfoodforever.com/chutney/tamarind-chutney.html)
1 tbsp red chili powder
1/2 tbsp garam masala
3-4 spring onions (roughly chopped)
coriander(finely chopped for garnishing)
For the curry base:
100g roasted peanuts
3 tbsp dark soy sauce
2 tbsp sugar
4-5 cloves garlic
1 tbsp red chili flakes
2 tbsp black pepper
1)Blend all the ingredients for the paste in a blender till it has a smooth but not runny consistency. Add a few spoonfuls of water if required.
2) In a pot, heat some oil and saute the paste in it for 5 minutes. Add in the chicken along with the tamarind chutney,red chili powder and garam masala. Cook covered for 10-15 minutes, till the chicken had cooked. If the chicken does not give off enough juices for the curry add 6-7 tbsps of water till you get the curry-like consistency.
3)In the last 2 minutes of cooking add in the spring onions. Garnish with coriander and serve hot with rice and a wedge of lemon.
