Chocolate Soufflé (Attempt 2)

Just some changes in the recipe and a microwave ganache to go with it.

INGREDIENTS:

Makes 1 (large)

2 eggs(separated)
80g dark chocolate
butter for greasing

For the ganache

80g any milk chocolate with nuts or fruits
same amount of cream

METHOD:

1)Preheat oven to 200°C.

2)Melt the dark chocolate in a double boiler or a microwave(30-45secs).

3)Whisk the dark chocolate into the eggs yolks till silky and smooth.

4)Whisk egg yolks till you get stiff peaks. Fold the egg yolks into the yolk and dark chocolate mixture. Fold till completely mixed but do not fold too much or the egg white gives off its air.

5)Pour into a greased mould big enough  for all of the mixture. Bake for 20 minutes. If you’re using smaller moulds, bake for a shorter while

6)While that’s in the oven, simply put the milk chocolate and the cream in a microwave for around 1 minute. Whisk after every 15 seconds or so.

Enjoy before it collapses!
