First time, first go.
Not entirely perfect but I am happy with it, even though I used cupcake cups instead of soufflé moulds.
5 egg yolks
4 egg whites
160g milk chocolate
butter for greasing
powdered sugar for dusting
1)Preheat oven at 200°C.
2)Melt chocolate in a double boiler or in a microwave till it is smooth enough.Whisk till silky.
3)Whisk in egg yolks. Mix well.
4)Whisk egg whites in a separate bowl till you get soft peaks. (If you whisk all of the whites together, it takes longer, so keep adding little at a time and whisk on high-speed.)
5)Fold in the white into the chocolate mixture. Make sure there are no chunks of frothy egg white in the mixture. Do not over work it.
6)Pour mixtures into soufflé moulds. Fill them till the top.
7) Bake in the oven for 10 minutes and serve immediately or they collapse! Dust top with sugar.
