The Cupcake Trio (Part 3) -Lemon –

The third and last part of the cupcake trio. Enjoy some lemony sweet cuppies!


(Makes 12)

125g self-raising flour
125g castor sugar
125g softened butter
2 eggs
1/2 teaspoon lemon essence
2 tbsp milk
yellow food color (optional)

For Royal Icing:

1 egg white
165g icing sugar
a couple of drops of lemon juice
a few drops of lemon essence
yellow food color (optional)

Toppings and decoration of your choice.


1) Preheat oven to 200C and line a tin with 12 cupcake cups.

2)Blitz butter, egg, sugar and flour really well. Add lemon essence, color and add milk while blitzing.

3) Drop in spoonfuls of the mixture in to the cups. Try to fill them equally, judging by eye, ofcourse.

3)Bake in preheated oven for 15-20 minutes. (Till the skewer comes out clean). Once baked let them rest and cool while you work on the icing.

4)Blend egg white and sugar till light and frothy. Add in a few drops of lemon juice ,essence and color and blitz till its thick but not hard.

5)Just add spoonfuls of icing on the cup cake. You need to work fast with the icing or it become hard.

6)Be creative, decorate! Garnish with lemon zest coated with some sugar.
