May sound weird but had a nice fragrance and the pink colour looks cute!
125g self-raising flour
125g castor sugar
125g softened butter
1/2 teaspoon rose essence
2 tbsp milk
baby pink food coloring (Optional)
For Royal Icing:
1 egg white
165g icing sugar
a couple of drops lemon juice
a couple of drops rose essence
Toppings and decoration of your choice.
1) Preheat oven to 200C and line a tin with 12 cupcake cups.
2)Blitz butter, egg, sugar and flour really well. Add rose essence, color and add milk while blitzing.
3) Drop in spoonfuls of the mixture in to the cups. Try to fill them equally, judging by eye, ofcourse.
3)Bake in preheated oven for 15-20 minutes. (Till the skewer comes out clean). Once baked let them rest and cool while you work on the icing.
4)Blend egg white and sugar till light and frothy. Add in a few drops of lemon juice, rose essence and color and blitz till its thick but not hard.
5)Just add spoonfuls of icing on the cup cake. You need to work fast with the icing or it become hard.
6)Be creative, decorate!
