Tomayo-eta (Tomato-Mayonnaise-Feta)

An easy snack to serve at a dinner party.

INGREDIENTS: (makes 5-6 toasts)

For mayonnaise

1 egg
1 cup milk
salt, pepper and crushed mustard seeds for seasoning
a couple of drops of lemon juice
1/2 tbsp white vinegar
1 tbsp sugar
extra virgin olive oil


about 3-4 tbsp  tomato ketchup
5-6 cubes of feta
a tbsp of extra virgin olive oil
dry oregano

and ofcourse bruschetta toast


For mayonnaise

1) Blend all ingredients  and add about half a cup of extra virgin olive oil as you blend.


2) Mix ketchup and mayonnaise till you get a light orange-ish tint.

3) Crush cubes of feta. Add oregano and extra virgin and mix.

4)Put a generous blob of the tomato and mayonnaise mix on the toast, spread, top with feta oregano mix and serve!
