A spicy veggie stir fry…
1 green chili (chopped)
a pinch of red chili powder
2 onions (finely chopped)
3 cloves of garlic (finely chopped)
a spoonful of ginger(finely chopped)
4 tablespoons of dark soy sauce
salt,pepper,sugar for taste
handful of sesame seeds
2 tbsp lack pepper corns and flake salt
1 large egg-plant(cut into chunks)
a handful of small white onions (peeled)
1)Roast peppercorns and salt flakes till slightly brown. Crush into a fine powder.
2)Saute onions,ginger, garlic and chili with soy sauce and sesame seeds. Add roasted pepper and salt powder . Saute till onions have softened and blended with the soy sauce. Season with salt sugar and pepper. Keep it aside.
3)Salt egg plant chunks asnd keep resting for atleast half and hour. Rinse throughly and gently pat dry.
4)Stir fry egg plant in a little bit of oil for 5-10 minutes till they crisp up a little bit. Add sauce and stir fry for another 3-4 minutes . Add onions at the end and saute for a minute.
