A lemon tart is a dessert dish, a variation of a tart. They have a normal, crimped, versatile pastryshell, while the filling is a basic variation of lemon paste.
For short-crust pastry:
2 cups flour
1 cup butter
a few drops of icy water
For lemon filling:
3 full eggs
zest and juice of 4 lemons
a few drops of vanilla essence
a few drops of yellow food coloring (optional-highlights the filling)
cater sugar (amount depends on your taste)
Short crust pastry-
2)Combine butter and flour, break down pieces of butter till you get a crumb like substance.Add drops of icy water to make it slightly doughy.Wrap tightly in a cling fill wrap and refrigerate for atleast 20 minutes.
3)Roll out as per the size of the tin. Thickness of the pastry depends on how you like it. Cut off excess bits from the border and poke throughly with fork.
4) Bake in oven for atleast 10minutes till its slightly golden-brown.
1) Double boil butter, eggs , sugar , lemon juice and half of the zest till you get a smooth and a little thick consistency. Taste and add more sugar or lemon juice if required. Add vanilla essence and food coloring and mix throughly.
2)Pour into pastry and sprinkle the remaining zest on top.
3)Bake for 15-20 minutes.
4)Let it cool and serve!
